RECIPE
Avocado Salad w/ arugula, kale & spinach, POM vinaigrette

Baby Arugula—small bag
Baby Spinach—small Bag
Kale—baby kale in bag if avail, if not, bunch of kale, chopped fine

POM Juice and POM Seeds

Place equal amounts of the greens in a large bowl. Gently mix with your hands to evenly distribute the greens. Next make the dressing; whisk 1/4c each of olive oil, canola oil and POM juice until combined. Season with a pinch of salt and pepper. Drizzle just enough dressing over the greens to lightly coat. Don't drown the greens! Arrange greens on two salad plates, top with segments of avocado and a sprinkling of POM seeds.
