Friday, June 2 is National Donut Day. As if I need a reason to celebrate donuts!?!
Growing up in my family Sundays were donut days. Yep. All through mass I thought about which one (or two) I'd pick when my dad took us to select the perfect dozen at Yum Yum Donuts. But as much as I love the ooey, gooey, Boston Cream and Dutch Apple types, I often reminisce about the ones my aunt and my mom used to buy in the 70s...from, believe it or not...the health food store! They were delicious, moist baked varieties like apple cinnamon and blueberry. The perfect companion to a tall glass of ice cold milk (or General Foods International Coffee if you were a grown up).
So in honor of Donut Day and in the spirit of "Eat Well..." here are 4 baked donut recipes that I've been wanting to test but just haven't had time. Let me know how they work out for you and feel free to send one my way!
Chai Spice Donuts - Made with coconut flour and coconut oil, both of which I've been using a lot these days to make healthy, low-carb treats.
Baked Apple Cinnamon Donuts - This recipe also offers a pumpkin alternative. If you're looking to eliminate processed foods from your diet then try substituting coconut sugar or date sugar for the brown sugar.
Glazed Chocolate Cake Donuts - Full disclosure: The only thing healthy about this one is that it's baked, not fried, so still a better alternative.
Blueberry Lemon Donuts - Lemon, blueberries, and high protein Greek yogurt. Sounds like breakfast!
