Salsa Verde is a versatile, bright and refreshing, easy to make condiment that's a welcome addition to Spring menus. Just a few fresh ingredients come together quickly and will stay fresh in a tightly sealed container in the fridge for up to a week. Spoon it over grilled meats, poultry, fish and seafood. Liven up side dishes and salads by tossing it with veggies or grains. Use it in place of mayonnaise in potato and pasta salads. Brush it over grilled flatbread. Drizzle over eggs. The possibilities are only limited by your imagination!
Salsa Verde
1/4 cup chopped parsley
1/4 cup chopped cilantro
1 TBSP capers, rinsed and rough chopped
1 tsp Dijon mustard
1 TBSP shallot, minced
1/2 tsp lemon zest
1 tsp lemon juice
1/4 cup olive oil
salt to taste
Whisk Dijon, lemon zest and juice and olive oil in a small bowl. Add remaining ingredients stirring well to combine. Enjoy!!
