I always look forward to learning what the food trends will be in the New Year and I can tell you that this year is looking fun and yummy! Here’s the rundown of the top food trends of 2020.

Elevated Breakfast - Regular readers of this blog know that I’m a breakfast fanatic. But what exactly is “elevated breakfast”? Basically it’s food combinations that are unexpected at breakfast from basic dishes like my favorites breakfast pizza and sauteed polenta topped with broccoli rabe and eggs, to more exotic fare like award winning Executive Chef and Partner of Chicago-based One-Off Hospitality, Paul Kahan’s omelette with fried oysters. Japanese Souffle Pancakes are trending now as is an unexpected twist on “egg in a hole”. Traditionally an egg baked in a hole cut out of the center of a slice of sauteed bread, the new and unexpected rendition is Egg in a Donut Hole, an egg baked in the hole of a proscuitto-wrapped glazed doughnut! I can’t say I’ll personally be running to make this one. But it’s interesting and fun nonetheless.

Comfort Food with a Healthy Twist - Cooking with a healthy twist is one of our areas of expertise and our meal delivery clients love some of the classic comfort foods like Crispy Baked Chicken Parmesan, Tex-Mex Turkey Meatloaf Cupcakes ‘iced’ with Chipotle Mashed Sweet Potatoes and our Root Vegetable Pot Pie. Simple tweaks to your meals like swapping meaty lentils and mushrooms for beef in a shepherds pie, zucchini or butternut squash noodles for pasta or cauliflower for potatoes can make comfort foods a lot more nutritious and just as satisfying and delicious.

Nashville Hot Chicken - Everyone likes fried chicken but some like it hot, hot, hot! This crispy, crunch fiery buttermilk fried chicken is heavy on the cayenne. Legend has it that it was created by a woman in the 1930’s, who served it to a boyfriend to punish him for his womanizing ways. He then turned it into a business. Ouch! So while it’s been around for a while it’s now popping up on menus all over the world with various levels of heat. An acquaintance who recently tried it (in Nashville) said she loved it but her mouth was on fire for 6 hours! Try it if you dare and in the traditional way with white bread and pickles. Korean Cuisine - While Mexican food reigned supreme in 2019, Korean cuisine, quickly becoming one of my personal favorites, is forecast to be the top cuisine of 2020. Look for the classics like Bibimbap, a rice bowl topped with a myriad of vegetables, meat and a sunny side up egg; Jap Chae, translucent “glass” noodles made from mung beans or sweet potatoes and served hot or cold; all types of Kimchi, spicy pickled cabbage; and Mandoo or Mandu, Korean-style dumplings.
