Warm up to Winter with Simple Sunday Suppers

Baby, it’s cold outside and there’s no better excuse to hunker down and enjoy a warm, comforting bowl of deliciousness with family and friends.  In our house it's on Sundays.  Whether there's two of us or ten we have fun creating and serving up simple Sunday lunches or dinners throughout the winter. Sometimes its our own creations or old family favorites. Other times we test out new recipes or something we’ve seen in a magazine or online just like you! The only rule is to keep it simple so that you can enjoy the day and the company whoever that may be.

It’s not surprising that the most popular meals we’ve shared have been the ones that are comforting with a touch of nostalgia like beef brisket chili with mac & cheese and oatmeal cookies; short rib ragu over fresh papparadelle, bibb Lettuce wedge salad and affogatto (vanilla ice cream topped with hot espresso) and BBQ pulled pork (or chicken) sandwiches, a bowl of chowder and warm apple blackberry cobbler.

This Shrimp and Corn Chowder from Damn Delicious was a big hit. Here are my tips if you decide to give this recipe a try:

  1. Use smoked paprika. It gives the chowder a distinct smoky flavor that you will completely miss out on if you substitute regular paprika.

  2. Use fresh herbs (3xs the amount of dried in the recipe).

  3. You can safely omit the cream (and reduce the calories) without sacrificing consistency. When the chowder is done cooking, strain out the shrimp and set aside. Puree 1/3 of the chowder then add the shrimp back in.

  4. Double the recipe. The only ‘problem’ with this recipe was there wasn’t enough! If this is the main event then you’ll want to make sure there’s a hearty bowl full for everyone to enjoy.
