Happy New Year! I’m not big on resolutions nor restrictive diets though I do need to dial it back at this time of year. So when I first saw this Harper’s Bazaar article titled, “The one thing nutritionists want you to stop eating in 2019”, I rolled my eyes. ‘What now?’, I sighed aloud. I held my breath fully expecting to find out that my dark chocolate was now blacklisted (it was not!). I was pleasantly surprised that what followed was a short, rational list of foods to avoid and that the advice was in alignment with the way we cook at Zest - limiting added sugar and sodium, using healthy fats, and creating foods to support a healthy lifestyle, not fad diets.
That said, despite the headline of this blog I’m not going to tell you to stop eating one food in 2019. Rather, if you are looking to make a change to your diet then pick just one thing to focus on. It doesn’t necessarily have to be something you’re going to eliminate. Maybe it’s something to incorporate like homemade healthy snacks instead of processed foods. Here’s one of my favorites to get you off to a happy, healthy start.
Curry Spiced Nuts Recipe
6 oz raw cashews
6 oz raw almonds
6 oz raw pecan halves
3 Tbsp coconut, melted or olive oil
4 tsp curry powder
2 tsp honey
1/2 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp cayenne or more to taste
Combine all ingredients, except honey, in a large bowl tossing to evenly coat. Spread the mixture out into an even layer on a baking sheet. Bake in preheated 350 degree oven for 10 minutes. Stir and cook an additional 5 minutes. Stir in the honey and cook 2 more minutes. Allow to cool and dry completely then transfer to an airtight container.
