I don’t normally blog other people’s articles. But when I read this one this morning I wanted to scream “Hallelujah!” at the top of my lungs. So I just had to share!

Try swapping salsa verde or a Dijon Vinaigrette for mayo in your potato salad. Bonus points for adding blanched green beans. Enjoy the crispy texture of french fries without the calories and fat by smash roasting your potatoes instead of frying. Get an extra dose of fiber and nutrients with Colcannon, an Irish dish combining mashed potatoes with spinach or cabbage. Replace butter with olive oil for a heart healthy alternative.
